2 for 1 day





No recipes were made yesterday, as Wednesday is our Family game night/pizza night. So, today I made 2 recipes from the book. The fact that they complement each other well was part of the inspiration.



First up, Pico De Gallo

Ingredients included tomatoes, onion, cilantro, jalepeno, lime and salt.












Very easy and quick, it looks and tastes like a recipe from one of our favorite Mexican restaurants.


Next up was Guacamole, I chose to make this today as well, since one of the main ingredients was the Pico De Gallo. The other of course was avacado.

And this one was done too.
Should make for a nice cool summer dinner, with the addition of some tortilla chips for dipping and maybe some nachos to help fill us up.

It's here...





When we got home from our trip yesterday, waiting on my front proch was the cookbook. I excitedly opened the book and began reading, if you've ever read The Pioneer Woman's website, you know how her book is written. Even if you never make a recipe from the book, it is worth reading just to laugh with Ree.








This morning, as I prepared my shopping list for the day, I was frantically looking for where I placed the cookbook, as I searched my husband said, "What are you looking for?", I said "my new book". He said, "OH, I was reading that last night, it looks pretty good." With a comment like that, I knew I was off to a good start.








Today's trial was Jalepeno poppers. Not to spoil the surprise, but can I just say YUMM. DH and myself enjoyed them, but they are a might to spicy for DS.



Here are the main ingredients:



Jalepenos

Cream Cheese

Cheddar Cheese

Green Onion

Bacon

BBQ Sauce











I won't give the recipe, as that wouldn't be right to PW, I will definately say that the recipe is easy to follow, and worth the price of the cookbook right here, even if you make nothing else, you must try these.





























Simple to make, easy to eat, not too much clean up. A definate recipe to add to my collection, I can really see myself making these for friends.








A funny story, while at the grocery store to pick up my ingredients, thecheck out lady asked me if I have ever tried jalepeno poppers like from the Pioneer Woman cookbook, I had to laugh and told her, that was what the ingredients were for.








Now off to make hamburgers, just so I can try a Jalepeno popper on top of one...

The Beach



Just got back from our annual pilgrimmage to the beach. Each Mother's day for the last 8 years my Mom, my son Max and I have gone to Fort Meyers Beach's Pink Shell Resort. Max was only a few months old the first time we went. It is probably the most anticipated event in our household. 4 days, 3 nights of pure relaxation. What more could a mom ask for?

Babies galore

I love babies, I jut don't want any more of my own. One was/is plenty. I much prefer my son at age 7 to when he was a baby, I like to hold them, spoil them and give them back. Coming up quickly we have 3 babies due to friends and coworkers, a little girl due in June, a boy due in July and another due sometime in Oct/Nov (she doesn't know yet but I'm sure it will be a boy). I am making quilts for these little darlings, just hope I can get them finished before the big days arrive.

Today I spent the better part of 2 hours cutting fabric for one of the boy quilts, I am planning a circle quilt, and am using fabric book panel for the focus fabrics. This one features "The Poky Little Puppy" I plan to include a copy of the book with it. Additionally I have "Saggy Baggy Elephant" fabric on order, and some really cute Sock Monkey ( I plan to include a homemade sock monkey with this one, as there is no coordinating book, that I know of). For the little girl I am making a rainbow string quilt. Lots of work, but hopefully they will be enjoyed for years to come.

Mondays!

Boy has it gotten hot, quickly. Last week we were still enjoying cool mornings (60's) with warm dry afternoons (80's). Today we startd out at 5:30 am 73 degrees, and expect to go to the mid 90's with the humidity making it feel like the low 100's. I'm sure not looking forward to the summer.

My son on the other hand loves the hot weather, it means he can spend the day in the pool. That boy sure loves his water, pool, ocean, lake, creek or even the bathtub. He lives in his bathing suit in the summer time.

Mondays around here mostly consist of housework and catching up with chores left undone on the weekends. While working on my kitchen today I daydreamed of the way I'd like it to look. We are in the process of remodelling our 104 year old house, we've been here 12 years and still have tons to do. Unfortunatly the kitchen remodel is way down on the list of rooms to get to. So, I started thinking, a little paint goes a long way. Right now the walls are painted a very dark, farmhouse green, the cabinets are kind of a "antiqued" beige that looks dirty ( started to paint them white, but didn't get finished), counter tops are white tile and the floors are brick paver tiles ( I hate the floor). In the kitchen we have a beautiful square table with a cherry wood finished top and black legs. We spend 80% of our awake/at home time in the kitchen. I think I would like to paint the walls white and the cabinets black. We recently got a paint sprayer, so it should be a fairly easy job that I could manage on my own. What do you think?

The Colors of Summer





Today was all about quilting. I had started the flimsy last week after falling in love with the jelly roll from Joann's, I finally had time to finish it up today. While I was on a roll (no pun intended) I decided to complete the quilt. It measures about 35"X40" and is quilted with undulating waves using tangerine thread. The colors in real life are very vibrant and bold. I then embroidered a label to finish it off.

In other news, I ordered my copy of The Pioneer Woman Cooks, from Amazon, it should be here around the 5th of May. Looking forward to breaking out of my cooking doldrums. When the weather turns to hot (today is in the 90's) I fall into the rut of not wanting to cook.
